Meal Prep/ planning on a budget 101

Step One: Make Lovely charts that lay out precisely what meals you are planning for each week and where and what you need for those meals to happen.

Step Two: Hunker down with a nice piece of paper ( I make a list for the store and a calendar of the week I'm planning for) and a stack of cookbooks from your book shelf.




Step Three: Find fun healthy, happy meals that satisfy the needs of your family and budget.

Step Four: SHOP, bring only cash and set aside an amount of Money every week for those things you need, be frugal, you really get creative when you need to. The amount we go by is $100 a month for every person, hence our home= 2 people= $200 a month for food= $50 a week. Easy, trust me... I make wonderful things with that amount you can too.
Trick is, STOP BUYING PROCESSED FOODS! Make it yourself, you can do it, I PROMISE!
Step Five: Make it one of your goals in the week to make everything you planned on making, I understand life happens and things don't always go as they planned, ie: I planned on making Chinese Chicken Salad Saturday night and my hubs and I ended up eating artichokes and french fries instead. just depends... but every other night this week except Friday and Saturday, I made what was on my list. It's really important to stick with it! It's rewarding!!!!! And fun!!!!

Step Six: This little trick I've learned is a GREAT way to get in your veggies and fruits during the day, before a meal while you're cooking, set out a few bowls on the table, olives, grapes, cut apples, orange slices, come over, we've got a TREE full that need harvesting, bananas, carrots and ranch, pickles, etc. It helps you and your loved ones get the fruit and veggies they need, and helps them fill up on the good stuff, which meals they'll eat less during the meal, and you'll have more left overs for lunches.



hint: Lunches are rarely made in our home, it's a rare thing, maybe once a week, we just take leftovers. Live with it, you don't want to waste right? Even if you don't want to eat it, just do it.
hint: each meal should cost somewhere within these ranges:
Dinner: $2 per person per meal
Lunch: $2 per person per meal
Breakfast: 75 cents or less per person per meal.
it isn't THAT hard planning out how much meals cost, ask me, I'll help you.

Another thing is that this $50 a week does NOT include household items, toilet paper, paper towels, make up, soaps, shampoo and conditioner. There is another budget for that, about $35 a month on those things, so about $85 total. I do use the home made laundry soap and dish washing soap, this saves LOADS of cash.
Here I go, I'm going to walk you through what I'm planning for this week:
March 2-8
Monday: Italian Meat Loaf, Mashed Potatoes, green beans, foccia, & banana pudding pie

We're having company tonight, but I'm still going to try and stay in budget as far as this meal goes:

The idea behind her cookbook is that you're hiding pureed veggies in all the recipes from the book. We've tried a few, but I just adore this idea, my husband hasn't LOVED all of them, but for the most part, they've been enjoyed by both of us.



Tuesday: Chicken and Sausage Paella
{Since we were invited over to my mother in laws Friday for pizza, I didn't get to make this recipe, but I have all the ingredients for it!}


Wednesday: Sloppy Joes
{I'm going to try yet another meal from Jessica Seinfeld's recipe book, I'll also try and make it today, my day off, and put it in the fridge for Wednesday.}


Thursday: Tuna Cassarole
{bible study night, I'll most likey make this thursday morning, throw it in the fridge till I can cook it when I get home from work thursday around 5:30pm}

Friday: Chicken Corn Chowder

Saturday: Dinner with Suzanne and Martha, we're making ravioli

Sunday: Left- overs

currently...






We're currently in Mesa, AZ with my sister and her family, really enjoying ourselves, shopping, munching, making and remembering sweet memories... we're headed out tomorrow, driving as far north as we can, through Utah, hopefully making it as far as Salt Lake, then the following day, we'll continue north, into Montana and stay for four nights, leaving the morning of the third! I am enjoying my time tremendously, it feels so great to just get away from it all, and relax, buy goodies... and be with family and friends :)

on the road again...

I am currently blogging from the road... litterally on the road, Thanks to my wonderful smart Husband's phone, we're able to drive thousands of miles, still conected to the world wide net! How fun! I'm looking out the covered wagon, I mean windows, at beautiful rugged, sun capped mountains here in the Southern California Desert, on our way to the Arizon state line and loosing an hour. It shall be worth it! We're going to be in Mesa AZ for two nights, spending time with my beautiful sister, her husband, and their 5 children and some of their children! it will be a trip worth the miles! Then sunday, the 28th, we're headed up from Mesa, through Utah, a teeny bit of Idaho, and into one of the most beautiful places in the grand ole Usa, Montana. If you haven't been, I'd HIGHLY advise you to check it out. Highly. We'll be staying in Bozeman, a cute town of about 50,000 in the winter, spring and fall months, and about 35,000 in summer. A thriving college town, with sweet festivals, a huge awesome farmers market, and characture unlike any other town I've experienced. I am beyong excited to spend time with my mom and husband, showing him around a place I hold so dear in my heart.

I'm praying God gets the glory in our time here on the road. What a gift He has given us... these mountains, this weather, snow, laughter, music and warm memories... Praise be to the Lord who gives and takes away.

For all you girls who wanted that recipe:

Here you go ladies :)
Chicken/Turkey Phillo Pie:prep: 20 minutesBake: 45 minutesOven 375deg.Stand: 10 minutesMakes: 8 servings
~2 meduim leeks, thinly sliced
~1 clove fresh garlic~1 tbsp butter or marg
~3 slightly beaten eggs~1 10- ounce package frozen chopped spinach, thawed and well drained
~1 cup shredded mozzarella cheese ( 4 ounces)
~2/3 cup milk
~ 2tbsp grated parmesan cheese
~dash of pepper
~2 cups chopped cooked turkey/ chicken
~4 sheets frozen phyillo dough, ( 18x14 inch rectangles), thawed
~3 tbsp butter butter or marg, melted



1.) In a medium skillet cook leeks and garlic in 1 tbsp hot butter until leeks are tender. In a large bowl combine leek mixture, eggs, spinach, mozzarella, milk, parmesean cheese, and pepper. Stir in turkey; set aside.

2.) Lightly brush 1 sheet of phyillo dough with some of the melted butter; fold in half crosswise. ( cover remaining phyllo with plastic wrap and a damp kitchen towel to prevent drying.) Gently press folded dough into a 9 inch pie plate; allow ends to hang over edge. Repeat with remaining sheets of dough and melted butter; staggeromg phyllo in pie plate so the bottom and sides are completly covered.

3.)Spoon turkey filling into phyllo crust. Fold end of the pyhllo toward the center. Bake uncovered, in a 375 oven for 45 to 50 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving. Enjoy!

What a wonderful day!














































We didn't have much planned for Thanksgiving, we had toyed with the idea of going two hours north to Michael's family's Ranch, but decided against going anywhere farther then just down the street. Plus they were serving goat, instead of Turkey, and he and I both REALLY wanted Traditonal Thanksgiving grub. So at church on Tuesday night, I was talking to my Associate Pastor's wife about how we weren't doing anything for Thanksgiving, and she said, " But I thought you were going to your husband's families house?!"
After telling her why we weren't, she got so excited and said, " Do you guys want to come to our house!? It's going to be packed, but we'd love to have you! I was going to invite you but you said you were going to the Ranch!"
So we excitidely accepted, and offered to bring mashed potatoes.

So we made ten lbs of mashed potatoes, and went over around 1:20pm, we were warmly welcomed and felt right at home. Dinner was ready about 30 minutes later, but before we sat down, we all stood in the living room and held hands, and Thanked God for all the Things He has done. Then we went around and said what we are thankful for, I said " Being here, and two years of marriage" :)
Every other adult, things about how wonderful it was to be there, how it felt like family, how it was going to be a lonely thanksgiving, but look what God provided...
What a wonderful way to start the day!
Dinner was AMAZING, Turkey, Ham, Taters, green bean cassarole, rolls, sweet potatoes, two kinds of stuffing, corn, gravy, and Cranberry Sauce... all so amazing.
I sat at their long table eating, and just looked around, I felt so warm and loved. My pastor said over and over again through out the day how much he loved us, how thankful he was Michael married me, and how thankful he was to have us at his home. I love andy and sondra... They're amazing.
I wanted to cry.

Then we played games, had wonderful pie and cheesecake, cookies and coffee, nuts, and soda. It was amazing.

We didn't leave till almost midnight :) what a memory!

I am thankful!

Love List: November

#1: Nothing warms me and my throat
like a lovely cup of tea.

time to have friends over and enjoy going
to coffee on a cold evening with a friend.

#3 Fabric Stores/ Fabric: I was in Joanne's yesterday
picking out the fabric for the Christmas gifts I'm making
this year and it really excited me!
#4: The fact that Christmas is just around the corner
if you know me well, or want to know me better, you'll
know/learn that I absolutly am CRAZY about Christmas,
Morgan, I totally LOVE that you're putting your tree up
next week... that's just lovely. :)


#5: Dresses, with boots, tights and a cute coat, what
would be more fall like!?




#6: House Slippers: I love them so much, i'll give you a
cute example: Tonight I was getting dinner ready and my husband
walked in and demanded I take off my shoes, he put my slippers
down and told me he didn't want my feet to get cold :)
He knows how much I love them, what a wonderful husband I have!





#7: Soft Thick Quilts/ Blankets: Need I say more?




#8: Starbucks has a new drink out this season, and I'm
hooked! Truffle Espresso. Try it.




#9: Stockings/ Tights, SO FALL! So cute!




#10: Hats. I boughts a neat hat at Ross a few days ago
it's tweed, rail road(ish) and I love it, I'm not usually a hat
person, but I'm trying, thanks to Amy Beth who wears hats
often, and beautifully.



#11 Boots: I SO long for a cute pair of flat boots

I heart Organic!

Tonight, I did one of my favorite things EVER! Go to Trader Joes and buy organic!!! Something about buying Organic, and I know some of it is mental, but I JUST adore it, I feel better about myself. Michael doesn't understand why in the world I adore organic... I try and explain to him, like I know what I'm talking about in order to encourage him to buy the food I put in the cart...
I tell him things like " They aren't grown with the pesticides that cause cancer" " It makes you feel better!"

I really try.
but I did make it out of there with $33 with mostly organic products with I am very pleased with!

Saturday Morning harvest festival breakfast with my pa!


1 cup all-purpose flour
1 Tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup buttermilk
1 egg
2 Tablespoons vegetable oil

Directions :
In a medium bowl, whisk together flour, sugar, baking powder, and salt.

In a small bowl, whisk together buttermilk, egg, and oil.

Add buttermilk mixture to flour mixture all at once and stir just until smooth (don’t overmix).

Let batter sit for a full 15 mins. to allow the flour time to absorb moisture from the liquid.

Pour batter onto hot griddle.

The batter is VERY thick and will need to be spread out into a circle quickly using the back of a spoon.

Turn when bubbles form on top of pancakes and cook until second side is golden brown. Makes about 6 pancakes.


*Note: These really come out thick and fluffy! If you want the batter to spread a little easier, you can increase the buttermilk to 1 C. and they will still come out good. Recipe is easily doubled or tripled (I haven't tried it more times than that).*



AND!

Pumpkin Spiced Latte


INGREDIENTS (Nutrition)
3 cups hot whole milk
4 teaspoons white sugar
1/2 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
6 ounces double-strength brewed coffee
3 tablespoons sweetened whipped cream
3 pinches pumpkin pie spice




DIRECTIONS
Combine the hot milk, sugar, vanilla extract, and pumpkin pie spice in a blender; blend until frothy. Pour the mixture into 3 coffee mugs to about 2/3 full. Pour 2 ounces coffee into each mug. Garnish each mug with whipped topping and pumpkin pie spice.
